One of our favorite salads this time of year is our Tanimura & Antle Artisan Lettuce with Cara Cara Orange & Shaved Fennel Winter Salad. We anticipate each year the arrival of all the components that complete this flavorful salad. Tanimura & Antle Artisan Lettuce, cara cara oranges, shaved fennel, toasted pine nuts, shaved Schoch romano cheese all tossed in our house made honey-lemon vinaigrette. Cara Cara Oranges: If you haven’t tried cara cara oranges you are seriously missing out this season. The Wharf Marketplace has the juiciest cara cara oranges that I have ever tasted. The cara cara oranges add a bright pop of color to any holiday salad while adding that sweet and tangy flavor.

Fennel: With its anise aroma and crunchy texture, it is the secret component of this year’s holiday salad. Good quality fennel consists of clean, firm, solid bulbs that have no signs of bruising; The Wharf Marketplace has the freshest fennel at the lowest market price you can find.

Pine Nuts: Have a buttery texture, slight crunch, and the right amount of nuttiness for our holiday salad. Pine nuts actually do come from pine cones and are the fanciest nut in my opinion. Toasting them really brings out their nutty flavor.

At The Wharf Marketplace we carry their Romano Cheese, and decided our Holiday salad would not be the same without the addition of this lovely, local cheese. House Made Lemon Vinaigrette: The Wharf Marketplace takes great pride in their salad dressings considering we have the best local salad bar in Monterey County. The house made lemon vinaigrette is a vibrant dressing that compliments all components of our Holiday Salad by adding the right amount of tangy citrus.


Preparation: 15 Minutes

Serves: 6 Guests


  • 2 tsp Lemon Juice

  • 3 tsp White Wine Vinegar

  • 2 tsp Extra Virgin Olive Oil

  • 1 tsp Local Honey

  • Pinch of Salt

  • Pinch of Pepper

4-5 cups Tanimura & Antle Artisan Lettuce (cut, rinsed, and chilled)


  • 2 Cara Cara Oranges (cut, peeled, and segmented)

  • 1 cup Shaved Fennel

  • ½ cup Toasted Pine Nuts

  • ¼ cup shaved Schoch Romano Cheese

Make the dressing first. Whisk the ingredients until they combine, and then gradually mix in the extra virgin olive oil. Set aside. Next, mix the Tanimura & Antle Artisan Lettuce with the rest of the other toppings. Place in refrigerator to chill. Minutes before you are ready to serve, toss the salad with the dressing and sprinkle a few pieces of shaved Schoch romano to finish the salad perfectly.
