Our TWM Vegetable Medley Salad features a creative way of using different types of raw cauliflower as a show stopping side or entre salad. It pairs nicely with all grilled salmon, chicken or steak. It has rainbow of colors and flavors to help you get your veggies in without it becoming a bore.
The spotlight ingredients in our TWM Vegetable Medley Salad are:
Tanimura & Antle Tri-Color Cauliflower: Pick 2 of your favorite heads! You can use our traditional white cauliflower, orange, purple or even the broccoflower®. All are high in Vitamin C and since you don’t need to cook them you don’t lose any of those nutrients.
Cherry Kumato Tomatoes: These little tomatoes are pact full of flavor and are also high in Vitamin C. They also help give your salad a little natural sweetness.
Carmel Valley Oil Co. Extra Virgin Olive Oil: We all know how beneficial it is to use a quality olive oil. It is high in Vitamin E and antioxidants. Carmel Valley Olive Company is family owned. They maintain their own orchards of Arbequina olive trees imported from Spain and added Picholine, Kalamata, and Picual over the years. Their olive oil is soft and buttery and has fruity characteristics.
TWM VEGETABLE MEDLEY SALAD
Preparation: 20 Minutes
Serves: 8 Guests as a side
- 2 Cauliflower Heads, pick two of your favorite and Shave
- 1 ½ c Cherry Kumato Tomatoes, Halved
- 1 c Edamame, Shelled
- 1 c Corn, Roasted
- 1 c Curly Kale, Finely Chopped
- Olive Oil, To Taste
- Salt, To Taste
- Freshly Ground Pepper, To Taste
- 2 Tbls Lemon Juice, Optional
Add all of your ingredients in a large bowl. Mix until combined and season to taste.
