This month we are taking a look at a seasonal vegetable packed full of health benefits and nutrients. That's right, we're talking about the wonderful acorn squash.

Acorn squash is rich in vitamin C and helps promote good digestion, prevents heart disease, and lowers risk of cancer. It is a natural source of fiber which helps prevent diabetes, and heart disease. Acorn squash is a great addition to soups. It can also be grilled, steamed, or baked in the oven.

Here at The Wharf Marketplace we make an exquisite stuffed acorn squash. First the acorn squash is halved and cleaned out. Then we put a little butter and brown sugar in the middle and rub light olive oil on the edges. We then bake it in the oven and place our quinoa salad right in the middle.
